Terres de Calcaire
The rocks of Solutré and Vergisson (Bajocian escarpments) are situated on limestone banks with entrochia, similar to those of the Côte d’Or, and owe this sharp profile to the very hard fossil corals that have protected them from erosion.
The vineyard lies on the slopes and at the foot of these rocks on stony scree and clay-limestone Jurassic soils.



HISTORY :

In Mâconnais area, this is the almost Romanesque story of a wine closely linked to the soil, a superb white burgundy nourished and fashioned by a first-class terroir .
Pouilly is a little winegrowing hamlet attached to Solutré. Fuissé is a picturesque, prosperous village, typically Burgundian. Their limestone slopes are very steep, both well exposed and well protected.

VINIFICATION :

100% Chardonnay pressed with great care and vinified at low temperatures. The must is then racked and the clear juice is allowed to ferment slowly in thermo-regulated stainless steel tanks in order to preserve the freshness and tension of the grape variety. Ageing for one part in stainless steel tank and for the other part in barrels.

WINE :

Colour: Pale golden colour with green tints.

Nose: Intense bouquet of aromas of white flowers and citrus, associated with notes of buttered bread.

Palate: A silky wine, quite rich with a very nice freshness!

SERVING SUGGESTIONS :

Pouilly-Fuissé is best appreciated when young, but it may be laid down for 2 to 5 years. It is the perfect accompaniment to smoked salmon, sole meunière, monkfish with saffron, quenellles with Nantua sauce. Frogs legs. Serve at between 11 to 12°C.
